小鸡炖蘑菇是东北名菜,中国大江南北只要是东北饭店一定在菜单上找的到的一道菜。这是在中国炖菜中占据一席之地的菜肴,用最朴实无华的食材做出最北方的味道。东北的大兴安岭出产很多山货,其中就包括各种蘑菇,东北当地人用野生榛蘑炖当地土鸡,东北当地人叫“溜达鸡”和粉条,加上各种香辛料做成这道家常美味。不得不承认,能把榛蘑和土鸡这两种食材放在一起非常适合。榛蘑赋予鸡肉特有的鲜味,鸡汤就给了榛蘑多层次的口感。
