【2021年7月11日】(明德網)澳大利亚牛肉是以其高品質、纯天然、无污染”著称的。几年前一位中国来探亲的朋友曾问我,商店里摆了各种不同的牛肉,那么最好吃的是哪部分啊?我告訴他,牛身上最嫩的部分是切割自牛腰背部的牛里脊,英文叫 Eye Fillet/Tenderloin,中文直译的话可以叫牛眼肉吧。这是牛肉口感最嫩的部位,脂肪含量也很低。同时也是最贵的一部分,因为一头牛身上只有2块,因此很珍贵。 Eye Fillet的肉质细嫩,不含肥膘,适于炒、熘、也适合用来煎牛排。
